10Cr15CoMoV
10Cr15CoMoV is a high quality stainless steel originating from China, which is one of the popular materials for the production of kitchen knives. Its composition and properties resemble the well-known Japanese VG-10 steel.
Composition:
C (carbon) - approx. 1% → hardness, sharpness
Cr (chromium) - approx. 15% → corrosion resistance
Co (cobalt) → increases the strength and stability of the blade
Mo (molybdenum) + V (vanadium) → improved wear resistance and long blade life
Properties of 10Cr15CoMoV steel:
Hardness 58-60 HRC
High corrosion resistance
Long blade life
easy re-sharpening
good toughness (resistance to breakage)
glossy blade appearance
Advantages:
Combination of hardness and corrosion resistance
suitable for professional and domestic use
ideal for utility and special knives
the price/performance ratio is very interesting
Disadvantages:
possibility of corrosion (e.g. prolonged soaking in water) if poorly maintained
slightly lower blade retention compared to premium Japanese steels
