The blade of these knives undergoes hardening in very precise vacuum furnaces (vacuum heat treatment) and is subsequently cooled with nitrogen. Each knife is hand-ground at an angle of 12-15° and, with a hardness of around 60 HRC, achieves extraordinary to extreme sharpness.
