Chef Kanetsugu PRO-J Hammer kitchen knife

This knife is ideal for versatile use. The long blade with a sharp point at the end is ideal for all kinds of cutting. It is suitable for cutting meat, slicing fish, cleaning meat and fish, fruits and vegetables. The Chef is very popular for cutting and preparing sashimi - the sharp tip digs into the fish and cuts it easily.

The blade is made of ZA-18 steel core, which is inserted between 2 layers of two AUS-2 stainless steels. The blade is specially cooled during production (up to -70°C), so called. Sub-Zero process. It is cut in the shape of a "hamaguriba", just like Japanese swords. That is why the blade is very hard and tough. The perfectly balanced, tapered Japanese-shaped blade has a shimmering hammered pattern that minimizes friction when cutting and prevents ingredients from sticking to the blade.
