Product detailed description
Japanese chef's knife Gyuto/Chef from Kanetsune KC-100 series
Very sharp Japanese knife Gyuto from Kanetsune KC-100 series. The Gyuto's spine and blade taper to a point for versatile use of its exceptional cutting power. Slicing, slicing, cleaning meat, fruit and vegetables - nothing will be a problem for this unique Japanese-shaped knife. The Gyuto chef's knife is also suitable for cradling herbs, vegetables and nuts thanks to its higher tip.
The Kanetsune KC-100 knife series combines perfect functionality, ergonomics and a unique Japanese design sense. Each knife is hand-ground and achieves exceptional to extreme sharpness with a core hardness of 60-62 HRC. It is a masterpiece that comes from the "city of knives" Seki-City in Japan. The use of VG-10 damascus steel and modern technology guarantees the highest possible quality among commercially produced knives. The very hard core of Japanese VG-10 steel is covered on each side by 16 layers of two stainless steels of different hardness. The final etching of the surface of the knife creates a visible structure of the individual layers, which symbolizes the stormy sea. The classic Western Plywood handle is connected to the blade with 3 rivets - ensuring perfect strength and giving you the best control when cutting and slicing.
For this knife we recommend to buy this wooden cover - saya.

Sharpening a kitchen knife
We recommend the use of diamond and water grinding stones for the knife edge. If you are not 100% sure of your skills and abilities, please contact us. We will sharpen your knives individually according to your wishes. We also regularly organize knife sharpening courses. Alternatively, look for a professional grinder in your area. Damage that could result from unprofessional grinding is irreversible.

Cleaning a kitchen knife:
Particles attached to the blade surface from aggressive substances can begin to corrode and form rust-like stains on the blade surface. However, it's not the blade that rusts, it's the attached particles. For example, baking soda is commonly used for removal, which when soaked forms a "slurry" and an old cork.
