Very sharp Japanese Gyuto knife from Kanetsune Hon-Warikomi YS-900 series with a core made of extremely hard Swedish Sandvik 19C27 steel, which is sandwiched between 2 layers of SUS 410 stainless steel. The knife spine and blade taper to a point for versatile use of the extraordinary cutting force.
