Japanese butcher knife Honesuki-Maru from Meat Processing Knife series

The Meat Processing Knife Series is a series of knives from the Japanese manufacturer Kanetsune, which is directly suitable for butchery work. This knife is made from Japanese SKD-12 steel and was manufactured in Seki City, Japan for the food industry. This is a very practical and well-shaped knife made of high quality materials. The steel used in these knives is hardened to a hardness of 60-61 HRC and has excellent toughness and blade life. The Honesuki-Maru shape, it's called the weirdo among knives. Just look at it and you can tell right away that it's just different. Its profile is strange, resembling a bow. The blade begins with a smooth transition with the shank in a uniform geometry. It is designed so that it can be held "from above" which is the way to hold the knife when processing hanging meat - processing in the vise. In an emergency, it can also be gripped like a regular boning knife and used for less specific work.

Many professional butchers and chefs prefer a knife like this because of its versatility. It's also a very nimble knife. Its simple aerodynamic design makes it nice and light, but beware, it's very easy to cut yourself with this savage if your hand gets cut.
