Japanese type of knife Yanagiba - Robust one-side knife sharpened in Japanese style only on one side. Professional long cutting knife designed mainly for cutting thin slices of fish for the sushi and sashimi. Its beautiful robust blade is able to cut the ingredients in long uninterrupted cuts and preserve their integrity and freshness. Yanagiba is one of the most important traditional Japanese knives and it is a part of many chef’s sets.
