Japanese butcher knife Kawahagi from Meat Processing Knife series

The Meat Processing Knife Series is a series of knives from the Japanese manufacturer Kanetsune, which is directly suitable for butchery work. Kawahagi is the name for this knife used for skinning slaughter animals. These knives are also called skinners. The blade is arched upwards, has a long blade and the large curve at the end of the blade reduces the risk of cutting the skin when skinning. The blade material is Japanese SKD-12 steel with high carbon content. This ensures an excellent and long-lasting edge with a hardness of 60-61 HRC. The basic simple shape of the handles has excellent grip. Fulltang construction with rosewood handle is designed for use in very demanding conditions.
