Extremely sharp Japanese knife Kiritsuke from the Hokiyama Dark Octagonal series made of Japanese steel AOGAMI SUPER (Blue Super Steel). The knife spine and blade taper to a point for versatile use of the extraordinary cutting force. Cutting, slicing, cleaning meat, fruit and vegetables - nothing will be a problem for this unique Japanese-shaped knife. The chef's knife is also suitable for cradling herbs, vegetables and nuts thanks to its higher tip. Each knife is hand-ground and achieves exceptional to extreme sharpness with a high core hardness.

We recommend purchasing a sheath or blade protector for the knife.

The Tosa-Ichi Dark Octagonal Kiritsuke knife has an ultra-sharp cutting core made from Japanese Aogami Super steel (Hitachi Metals Ltd.) is one of Japan's finest carbon steels. In addition to containing more carbon, chromium and tungsten than blue steel No. 1, it also includes molybdenum. It has very good edge sharpness and excellent retention. It is capable of achieving high hardness up to 63 HRC without being brittle. As a result, many knife enthusiasts rate Aogami Super as one of the best high carbon steels in the world. The outer surface is SUS-405 clad steel. Avoid bending, bumping and levering at all costs.
