Japanese Santoku chef's knife from Kanetsune Damascus Minamo-Kaze series

Very sharp Japanese Santoku knife from Kanetsune Damascus Minamo-Kaze series made of Japanese damascus steel. The Santoku knife is a ruthless kitchen warrior that is ready for all your wishes. The Japanese word"Santoku" is roughly translated as"three virtues", which is indicative of the versatility of this knife style and the type of cuts it excels at(cutting, slicing and grinding). The blade is usually shorter than a chef's knife with a significantly different geometry. The Santoku knife is often claimed to be a fusion between a chef's knife and a Nakiri, giving you the benefits of both. The higher facet reduces friction, making slicing more precise. The Santoku is the perfect companion when working with meat, fish, vegetables and fruit. You will appreciate the unsurpassed properties of the knife, for example, when slicing onions. The sharpness of the blade ensures minimal liquid leakage and your food will be full of juices and vitamins.

Minamo-Kaze

Translated into English, it means "reflection on the water surface". And if you look at the attractive damascus blade, it really looks like a reflection of the rays on the water surface. It is composed of 63 layers of damascus steel with a high carbon steel core with a hardness of HRC 61 ± 0.5. The Japanese traditional octagon handle "八角 柄" is made of red Plywood and is tastefully complemented with black micarta stripes, engraved with the Kanetsune emblem at the end of the handle. The method of attaching the blade to the Etsuke handle here is called thrusting, where the blade is heated and crashes into the handle. This knife comes in a deluxe wooden box with a Japanese saya(wooden blade cover), which is made of magnolia wood with a traditional Kuro-Ishime finish.
