This sharp Japanese Sashimi/Yanagiba knife made of high quality 420 J2 HRC 53(+/-) stainless steel was manufactured in Seki, a city famous for knife making all over the world. Sturdy single-sided knife ground in Japanese style on one side only. Professional long slicing knife designed to cut thin slices of fish for sushi and sashimi. Its beautifully robust blade is capable of cutting ingredients in long uninterrupted cuts, thus preserving their integrity and freshness.
