Product detailed description
Japanese chef's knife Sujihiki from Kanetsune AUS 10 PRO series
Slicer from Kanetsune AUS 10 PRO series. Ensure every turkey, every roast and every ham is perfectly sliced, with seamless movement and effortless maneuverability. If you are a beef carpaccio lover, this knife should become a must-have in your kitchen. Japanese art and new technologies make this knife unique and inimitable. The blade is made of high quality Japanese stainless steel AUS-10, which contains 0.95 - 1.10% carbon and a well-balanced composition of molybdenum, vanadium and other alloys. This stainless steel has excellent corrosion resistance and toughness, the hardness is HRC 59-60. The basic and simple Plywood handle has excellent grip and high wear resistance. Full tang construction (the blade of the knife goes through the whole knife and the handle is riveted with 3 rivets) guarantees the overall structural strength.
This series of knives is asymmetrically ground, which means that although the knife is designed as double-sided ground (suitable for right and left-handed users - so called 50/50), it is equipped with a 90/10 bevel for right-handed users. This sharpening is typical for Japanese users and guarantees a much sharper knife and better penetration of the cut material. There are also similar asymmetrical grinds, for example 70/30 or 80/20.
These knives can be resharpened in our grinding shop to your desired type of angle at your request for a fee.

Sharpening a kitchen knife
We recommend the use of diamond and water grinding stones for the knife edge. If you are not 100% sure of your skills and abilities, please contact us. We will sharpen your knives individually according to your wishes. We also regularly organize knife sharpening courses. Alternatively, look for a professional grinder in your area. Damage that could result from unprofessional grinding is irreversible.

Cleaning a kitchen knife:
Particles attached to the blade surface from aggressive substances can begin to corrode and form rust-like stains on the blade surface. However, it's not the blade that rusts, it's the attached particles. For example, baking soda is commonly used for removal, which when soaked forms a "slurry" and an old cork.
