Unagi-Saki chef's knife from Kanetsune G-Series

Extremely sharp Japanese knife Unagi-Saki from Kanetsune Honsho Kanemasa G-Series. Unagi means eel in Japanese. The tip of the knife is very sharp, making it ideal for filleting fish, especially eels. This is done by inserting the sharp tip of a knife into the eel near the head and then making a cut along the length of the eel so that the backbone can be easily removed. Then the special shape of the knife helps you to create the desired portions or fillets. At first glance, this type of knife is characterised by a short handle that fits perfectly in the palm of your hand.
