X50CrMoV15
X50CrMov steel has ideal properties for the production of kitchen knives. This type of steel is widely used by cutlery shops in Germany, where it is also predominantly produced. It is equivalent to German steel 1.4116. X50CrMov15 is used by all major kitchen knife manufacturers and professionals: Wusthof, Zwilling, Güde but also the rest of the world (France, Spain, Asia). In France it is commonly called Z50, but it differs somewhat from Z40 in that it is enriched with two main elements: molybdenum and vanadium. Properties of molybdenum and vanadium: Molybdenum is a powerful carbide generator that also has the property of increasing corrosion resistance. Therefore, it is often used in high alloy Cr steels. Vanadium is also a carbide generator that will increase wear resistance. It also increases resistance to tempering and allows grain refinement during heat treatment. On the other hand, it is an air quenching inhibitor to increase hardness, the cooling rate is even more critical than that of X46cr13 steel, which does not contain vanadium.This steel is wear-resistant and corrosion-resistant - it is a good choice for kitchen knife manufacturers.
