Japanese chef's knife Yanagiba from Kanetsune KC-400 series

Extremely sharp Yanagiba knife from Kanetsune White Steel KC-400 series is made of White steel #2 core, 11 layers damascus. It is a long slicing knife, ground on one side only, designed to cut thin slices of fish for sushi and sashimi. With this knife you can easily cut large pieces of meat (roasts), but also thin slices of vegetables. Its beautiful, elegant thin blade is able to cut ingredients in long uninterrupted cuts, thus preserving their integrity and freshness. Yanagiba is one of the most important traditional Japanese knives and is part of the repertoire of many chefs. KC-400 Series 11-layers Damascus Blade

The blade core of these knives is forged from high carbon White Steel #2. This steel has excellent edge retention and durability due to its chromium and tungsten alloying. It is very popular with Japanese knife makers. The hardness of the knife is 60-61 HRC. The beautiful damascus blade is composed of 11 layers and an extremely sharp cutting core. The blade is fitted with a traditional Japanese "D" shaped handle made of red sandalwood, the bolster is made of black Plywood.
