Very sharp Japanese Yanagiba/Sashimi knife from Kanetsune Honsho Kanemasa G-Series. Long slicing knife ground on one side only, designed for cutting thin slices of fish for sushi and sashimi. With this knife you can easily cut large pieces of meat (roasts), but also thin slices of vegetables. Its beautiful, elegant thin blade is able to cut ingredients in long uninterrupted cuts, thus preserving their integrity and freshness.
