Kitchen knife Masahiro BWH Utility 150mm Waved Edge
BWH is a series of knives based on the MV-H knife. It also uses molybdenum-vanadium high-carbon stainless steel MBS-26, which undergoes a three-stage hardening process during production until it reaches a hardness of 58-59 HRC. Each blade has been perfected by craftsmen with over 30 years of experience who have elevated the knives to an unprecedented level of sharpness.
The handle is made from a wood called Black Pakkawood, several layers of which have been compressed under high pressure and temperature to create a uniform, highly durable, moisture and water resistant material. The antibacterial-treated wooden handle is as easy to maintain as the plastic one and is secured by three perfectly set and polished rivets.
The knives in this series are sharpened on both sides, but unlike most Western manufacturers, Masahiro sharpens them asymmetrically 80/20. This means that the blade is shifted to one side in the axis of the knife. The advantages of asymmetric focusing are up to 35% thinner edge compared to symmetric focusing and thus significantly sharper.
