Masahiro MV-H Chef Dimple is one of the most frequently chosen kitchen knives by both professional and amateur chefs. The characteristic shape of the knife, which originated in French cuisine, is used for many kitchen tasks and the name chef's knife underlines the fact that it is an indispensable tool for every cook. The knife is very light and the handle fits well in both small and large hands. Thanks to the perfect balance of blade and handle, it allows a rhythmic, highly efficient rocking motion on the surface when slicing or chopping different products.

Dimple version has grooves on both sides of the blade to prevent sliced food from sticking to the blade.

The MV-H series was designed and manufactured for European and American consumers who use knives in a slightly different way than in Japan. In addition to cutting, knives are also used for slicing in the West. With this technique in mind, the blades of the MV-H series knives have been made slightly thicker and more durable for heavier work.

The knives in this range are made from high carbon MBS-26 stainless steel, a derivative of molybdenum and vanadium, which has been subjected to a three-stage hardening process until it reaches a hardness of 58-59 HRC. Each blade has been perfected by craftsmen with over 30 years of experience, who have elevated the knives to a more perfect Masahiro level of unprecedented sharpness.

The hygienic handle with antibacterial properties is made of a material called polyacetal (POM), which is characterised by its extraordinary durability. The handle is secured by three perfectly set rivets and there is an additional metal reinforcement between it and the blade.

The knives in this series are sharpened on both sides, but unlike most Western manufacturers, Masahiro sharpens them asymmetrically 80/20. This means that the blade is shifted to one side in the axis of the knife. The advantages of asymmetric focusing are up to 35% thinner focus compared to symmetric focusing, and therefore significantly sharper.
