Tsuchime Shadow Knife KIRITSUKE 240 mm has extra sharp cutting core made of Japanese steel Aogami Super (Hitachi Metals Ltd.) and it is one of the best Japanese carbon steels. Except that it contains more carbon, chromium and tungsten than the blue steel n.1, it also includes molybdenum. It has very good sharpness of the edges and an excellent retention. It can reach high level of hardness up to 65 HRC, without being fragile. Because of this, many knife fans evaluate the Aogami Super as one of the best high carbon steels in the world. Outer surface is made of SUS-405 clad steel.
The handle is made of material Pakka-wood with 3 rivets. It is always thoroughly polished, ergonomically shaped, and designed for excellent manual operating. Triple riveting of the knife to the handle ensures perfect firmness and jointing. Pakka-wood is water-resistant and absolutely without any odour. You can be sure, that the material Pakka-wood won’t corrode, oxidise or become softer or more fragile. This material doesn’t need practically any service, unlike the traditional materials like wood.
Never wash the quality knife in the dishwasher! After using, rinse the knife, dry it with napkin or kitchen towel and store it in safe place.
